Forsyningen af grøntsager viser fortsat stigning

Danmarks Statistik har i dag, 26. oktober udgivet tal for forsyningen af grøntsager. Tallene viser at forsyningen af grøntsager er steget med 12% fra 2000 til 2003 og nu ligger på 80 kilo pr.

indbygger.

Det er navnlig forsyningen af salatgrøntsagerne tomat, agurk og salat som de senere år er steget, hvilket også bekræftes af Danmarks Fødevareforsknings kostundersøgelser. Fra 1986/87 til 2003 er der sket en fordobling af forsyningen af salatgrøntsagerne fra 22 til 46 kg pr. indbygger, mens forsyningen af de grovere grøntsager som gulerødder, kål og løg har ligget nogenlunde konstant på knap 35 kg pr. indbygger.

Det er glædeligt at forbruget af grøntsager stiger, men udfra et ernæringsmæssigt synspunkt havde det været ønskeligt at forbruget af de grovere grøntsager også stiger, idet disse indeholder mere kostfibre end

salatgrøntsagerne. Overordnet er det fortsat ønskeligt at danskerne spiser flere grøntsager, idet det kun er hver 10. dansker over 10 år, som spiser nok frugt og grønt.

Forsyningsstatistikken viser den erhvervsmæssige produktion i Danmark efter svind hos producent plus import minus eksport og kan betragtes som tal der viser hvad der er til rådighed for befolkningen. Tallene vil altid være højere end de tal der ses i fx kostundersøgelser.
