Data om falafler i kostundersøgelser

I kostdagbogen, som deltagerne i kostundersøgelsen udfylder, kan det registreres, når man har fået de ”rene”, tørrede bønner, linser, kikærter og lignende. Det kan også registreres, hvis man har fået disse produkter sammen med sovn i en ret. Det er en for-trykt afkrysningsmulighed i kostdagbogen.

Har deltagerne derudover fået tørrede bælgfrugter som ingrediens i en sammensat fødevare, fx falafel eller hummus, skal de selv skrive det i ”åbne svar”. Når vi regner om til næringsstofindtag, så sker det ved hjælp af generiske opskrifter, og ikke via data fra Fødevaredatabanken (frida.fooddata.dk).
